Fried rice is one of those Chinese take-out menu items that you can easily make at home! The addition of eggs to fried rice is what makes this traditional rice dish packed with protein. Check out my Chinese Fried Rice Recipe – Take-Out Style recipe below!

Eggs are a dietary mainstay – not only for breakfast but for a quick lunch or dinner, and also as an ingredient for sweet and savoury dishes. Eggs are loaded with vitamins, minerals, high quality proteins, good fats and various other lesser-known nutrients.

Some tips to create the perfect Chinese fried rice:

  • Use cold, leftover cooked rice. Left in the fridge overnight, the rice grains will firm up, making it easier to separate and decreasing the chances of your fried rice turning out mushy.
  • When cooking the rice, don’t add too much water to the pot. If you’re cooking 1 cup, use about 1 cup of water and a few tablespoons more.
  • Another trick? Fry the rice dry first in the pot before adding water.
  • Don’t overdo the saucy seasonings – just add one tablespoon each of soy sauce, fish sauce and sesame oil. Adjust to taste.
  • Cook the eggs in a separate pan before adding to the wok.

Here is my recipe for Chinese Fried Rice:

Chinese Fried Rice Recipe

Preparation Time:  5 minutes    Cooking Time: 7 minutes        Serves:  4

Ingredients:

3 cups leftover cold rice

3 eggs

2 cups bean sprouts, rinsed

1 cup carrots, finely chopped

1 cup frozen green peas, thawed

1 small red onion, chopped (or substitute with green onions)

1 tablespoon light oil, your choice (I used grape seed oil)

1 tablespoon fish sauce

1 tablespoon sesame oil

1 tablespoon soy sauce or Coconut Aminos (soy-free)

Chinese fried rice recipe - restaurant style

Method:

  1. In a wok or large frying pan on high heat, sauté carrots together for several minutes until softened, stirring constantly.
  2. Add onions and peas and sauté for a few more minutes.
  3. In a separate pan, scramble together 3 eggs until cooked.
  4. Add the rice to the wok, then fish sauce, sesame oil and soy sauce, cooking for a few minutes.
  5. Add scrambled eggs, stirring constantly.
  6. Add the bean sprouts and sauté for about two more minutes.
  7. Serve and enjoy!

Back in Greece, my parents would prepare this simple and delicious dish — eggs with tomato and feta cheese, or Ντομάτες με Aυγά. The more common name of this dish is “eggs with tomatoes”. In parts of Greece, they call this dish Strapatsada στραπατσάδα or Kagianas. My parents simply call it Tomatoes with Eggs and Feta, which is what the name implies – scrambled eggs with tomato and feta.

My mom explained that this was a traditional Greek dish for any time of the day – breakfast, or as a side dish at lunch or dinner. It was also an easy dish to make and because of the low cost of ingredients – tomatoes, eggs and olive oil – it could be made any time of day. It can also be used as a dip… mmm, with warm pita bread, or freshly baked baguette.

Here is my mom’s Greek Eggs with Tomato and Feta Recipe! 

Greek Eggs with Tomato and Feta

Preparation Time:  3 minutes    Cooking Time: 5 minutes     Serves:  2

Ingredients

4 small tomatoes, chopped or grated

3 eggs

1/3 cup crumbled feta cheese

1 tablespoon extra-virgin olive oil

Method

  1. In a frying pan, cook tomatoes on medium heat until most of the water from the tomatoes has evaporated.
  2. Add the olive oil.
  3. In a separate bowl, beat together 3 eggs.
  4. Add to pan and cook for a couple of minutes, before adding the crumbled feta.
  5. Scramble all together until cooked.
  6. Serve and enjoy! Serves 2.

1 cup smoked ham, cubed

1 cup old cheddar, cubed

Pinch of pepper

Method

Chop all the vegetables, ham and cheddar and set aside. Beat together the eggs with milk. Add vegetables, ham and cheddar and mix well. With a ladle, pour into greased muffin pan.

Bake at 375 F for about 20 minutes or until top is golden.

As the weather gets cooler and we’re spending more time indoors, it’s a good idea to reduce the dust in your house. Prolonged exposure to indoor allergens can cause a variety of symptoms, including coughing, congestion, sneezing, watery eyes and more.

1. Dust with microfiber cloths. This fabric is designed to trap dust and hold it. Using an old t-shirt, or feather dusters tend to move the dust around rather than actually getting rid of it.

2. Vacuum often. Vacuuming frequently cuts down on the amount of dust build up under furniture and in corners. Make sure to use a good vacuum with powerful suction.

3. Mop often. After vacuuming, mop your floors with a wet mop.

4. Wash your bedding often. Wonder why you’re waking up with stuffy noses? Dust loves to accumulate in sheets, blankets, pillows and blankets.

5. Beat your cushions and rugs once a month. Like your bedding, your furniture cushions and your rugs have a tendency to attract dust. Every three months, take your cushions and rugs outside and literally whack them with a stick to remove dust particles.

6. Clean your walls from top to bottom. Every few months, dust walls, trim and baseboards with microfiber cloths. Start from top to bottom, so you can collect dust that falls down as you clean.

7. Replace your old, dirty furnace and air conditioner filters.

How often do you eat fish? I enjoyed plenty this past summer in Prince Edward Island, North Carolina and of course, in Greece. The Meditteranean diet has garnered a lot of attention because of its heart-healthy diet high in vegetables, legumes, fruits, nuts, olive oil and fish.

Most Canadians don’t eat enough fish. Health Canada recommends two 75-gram servings per week, but on average, we fall short. We could be doing more for our hearts and our overall health by making an effort to eat more fish and seafood at home.

Did you know that the Japanese have half as many heart attacks as North Americans? On average, they eat 100 grams of fish per day, according to a study in the July 2008 Journal of the American College of Cardiology.

So how can we add more fish to our weekly menu?

You have the option of cooking in the microwave too. The counter will provide you with a cheat sheet with instructions on how to cook your fish at home. Then, just worry about making a side dish to go with your seafood. Most cuts of fish take about 20-25 minutes to cook in the oven, so dinner can be on the table in a half an hour!

First, I tried a fillet of Haddock with lemon and dill. It was delicious! While haddock is supposed to be a bit more fishy-tasting, the lemon and dill was a delicious compliment to its taste.

Then, I had to have a hearty piece of Halibut, my favourite fish and on the pricier side. I tried this one with garlic and parsley – it was equally delicious! But I do think the lemon and dill butter is my favourite flavour.
