I’ve been undergoing a huge lifestyle adjustment. If you follow me, you’ve noticed I’m posting a lot more recipes that are grain free, gluten free, dairy free – why have I cut many foods out of my diet?

A few people I know have been going through some changes as well and I’ve noticed they too have developed food sensitivities. I’m sharing this because it many help others who are wondering, why can’t I eat anything anymore?!

I remember as a teenager, my mom would make pizza every Saturday night. I’d eat a few slices of her homemade delight and head out with friends… but then I would have to leave early due to an upset stomach. Whether it was the dough, cheese or the pepperoni, something didn’t sit well with me.

I was a carb freak, not a big meat eater either. So my weight would tend to creep up, especially around my middle until I’d cut out the carbs, drop the weight, and then the cycle would start all over again.

Fast forward quite a few of years to soon after having my second child in 2007. The bloating and stomach pain seemed to worsen as time went on. When having an episode of bad bloating once a month became a daily occurrence, I knew I had to look into it. Why am I always bloated?

In 2009, I had a series of appointments and tests for my stomach issues. First tests checked my iron levels, thyroid, etc. and everything came back fine. I underwent an ultrasound which showed some inflammation but nothing else. My family doctor then sent me to see a gastroenterologist who ordered more tests including a colonoscopy – yes, how fun was that – and an endoscopy in 2010. I also did a food allergy test which showed I may be lactose intolerant and sensitive to wheat, but thankfully the Celiac test came back negative.

“So what can I do now?” I remember asking. “What is causing the bloating?”

The doctors couldn’t give me an explanation or solution to my constant discomfort. I was left to figure things out on my own.

I realized over time that whole wheat was the devil and oats and bran were also on my avoid-like-the-plague list of foods I had to cut out completely from my diet.

On I went, coming to realize on my own that eating too much of any carbohydrate would leave me feeling too full. It seems that EVERYTHING was bothering me. I’d eat breakfast and have an upset stomach, lunch, dinner – it didn’t seem to matter, I was bloated every day.

In 2012, I went on a on a low carb diet yet again. I tried to avoid bread and pasta, most dairy products and ate mostly vegetables, fruits and leaner cuts of meats. For snacks, I’d reach for yogurt and Wasa crackers, apples with peanut butter, cheese and crackers, hummus and pita, and for meals a lot of chicken, soups, veggies and fruits. But that couldn’t last long – you can’t deprive yourself completely! Triple fudge brownies? Penne a la vodka? How could I resist? I felt I had already cut out many foods out of my diet. Little did I know this was just the beginning.

The eczema on my hand diminished and I was feeling more energetic and less sluggish. Of course, taking vitamins and working out also helped my energy levels.

But of course such restrictions become difficult to follow day after day and I’m human! I craved pizza and pasta and I fell into the carb trap once again. I overdid it and once again, the bloating took over. But this time, it was pretty much happening every day to the point where my stomach felt tender to the touch. There were days I bloated so much, I looked six months pregnant.

Back to the doctor I went in 2014, asking for tests once again. In the meantime, I started keeping a log of what I would eat and then the reaction, if any. Was it the coffee? The acid in the coffee, or the cream or the type of sugar I used? I went from milk to lactose free milk, then tried organic milk and then avoided milk completely. I went from frozen yogurt to full-fat ice cream, wondering if the processing was the issue or the lactose or the process of removing the lactose! Gahhhh!

After weeks of trying and logging, I came to realize what foods were bothering me the most and which foods to cut out of my diet: wheat, oats, bran, soy, dairy, legumes (sometimes).

This past fall, I finally went to see a Naturopathic Doctor. If my medical doctor couldn’t help much, why wouldn’t I seek out natural alternatives? I did a food sensitivity test which revealed all that I already suspected… and more!

Peanuts? I had made the switch to organic peanut butter some time ago, which seemed to help. And I opted for almond butter as well.

Eggs? Noooooo! Had I eaten so much of these foods that I became sensitive to them?

My stomach had become so irritated and inflamed from these foods that I was forced to cut them out of my diet to help my stomach heal. So I have… In the past, I would CRAVE the foods I couldn’t eat, especially because they were forbidden! But now it doesn’t even faze me. It has become a complete lifestyle change.

It’s just not worth the pain and discomfort.  Did you know that wheat can stay in your system for several months? I won’t even “cheat” a little, to have some pasta or a piece of fresh Italian bread – it’s just not worth the havoc it wreaks.

It’s been several months now that I’ve gone gluten and wheat free, and several weeks that I’ve been soy and dairy free. I definitely am feeling a HUGE difference – the bloating has improved tremendously. I don’t feel like I’m 100% yet but I’m on the road to healing my stomach.

Just because I can’t eat wheat anymore, doesn’t mean I can’t enjoy bread!

This recipe is quick – I usually make it 15 minutes before dinner is on the table. You can also use it as a pizza crust.

Ingredients:

1/3 cup each coconut, almond and tapioca
½ tsp each salt, garlic and onion powder, oregano
1 tbsp extra virgin olive oil
Enough water to blend (about ¼ cup warm water)

Directions:

Mix all ingredients together in a bowl and mix with a fork until blended. Transfer to a large piece of parchment paper.

Cover the dough with a piece of wax paper; using a rolling pin, roll out dough. Keeping dough on the parchment paper, transfer to a pan.

Cook for 10 minutes on 375. Sprinkle with sea salt and olive oil and enjoy!

There is nothing as cozy as climbing into bed with sheets that smell fresh and lovely. Not too strong of a scent – just a gentle whiff of lavender or fruit.

AWKWARD: Jacqueline Bisset was the second speech of the night – she may have been already had a few too many glasses of something… I went to get a glass of water with ice and came back to the TV and Bisset was still having a thought. The poor woman tried really hard to spit the words out but managed to talk about forgiveness before the music started a second time to cut her off.

Note to actors: If you’re nominated, there IS a chance you could very well win so prepare a speech and save us the AGONY. Please.

AWKWARD: Diane Keaton singing a lullaby while accepting the Cecil B. Demille award for Woody Allen was awkward and creepy all rolled into one inappropriate mess.

AWKWARD: When Bono avoids a hug from P Diddy, Puffy, Diddy, whatever his name is:

AWKWARD: The seating arrangements were horrible. It took several minutes for winners to make it to the stage. Don’t they already know who has won? Please put them closer to the stage! Or better yet, have a side stage set up where Tina Fey and Amy Poehler can perform interpretive dance to the music while winners are painfully sauntering to accept their award.

BEST: For me the best moment was watching Jared Leto win the Golden Globe for Best Supporting Actor in a Drama for his role in Dallas Buyers Club. Here’s a pic of him that the Globes took backstage with his brother, Shannon Leto.

It’s that time of year again –  when we reflect upon the past year to measure our accomplishments. Did we achieve what we said we would do? And for most of us, 97% in fact, the answer is NO! When we look back to see what we did accomplish we see everything that we did not accomplish.

If you’re like most people, setting goals at this time of year has little to do with you expressing yourself; doing the things that are important to you. And more to do with what you think you ‘should’ do.

The most common resolution women make at this time of year is to eat and exercise regularly. It’s another way of saying, “I should lose weight.” According to Time Magazine, 60% of gym memberships go unused in January and attendance is back to normal come February.

Another common new year’s resolution women make is to complete all of those unfinished tasks on the to-do-list; repairs, writing and blogging ideas, starting a small business, getting involved with the community, etc. All of the tasks that make you depressed when you realize you didn’t complete a single thing on the list.

So why does it happen? Why do you make New Year resolutions with excitement but then fail to achieve them? The answer is very simple. You simply do not value what it is you think you ‘should’ do.

This year I’d like for you to consider making new year’s resolutions despite all of the controversy that is going on that suggest that its a waist of time to set resolutions. This year you’re going to use a simple 3-step process when making New Year’s Goals.

Step 1

First you’re going to identify your most prominent strengths. These are skills you use every day to solve problems. More often than not your natural strengths are not as obvious to you as it would be for a mentor or life coach.

Step 2

Next, you need to figure out what you value most. These are characteristics about yourself that define the choices you make. More often than not your value system is unconscious and automatic. Spend some time first to discover your core values.

Step 3

Lastly, you must know your needs. Your needs motivate you to achieve your goals. If you set goals that do not satisfy your needs, you’re not likely to succeed.

So this year when setting your goals for the new  year, validate your goals by asking yourself these three questions:

  1. What natural strengths will I be using?
  2. What values will I be expressing?
  3. And, does this goal satisfy my needs?

What is your word for 2014?

I generally don’t make any new year’s resolutions but I do attempt to make some new goals every year. As I’ve seen others create a power word or theme word for the new year, I thought I’d make an attempt this year to follow suit.

Narrowing it all down to just one word came to be quite challenging for me. I have been pondering for the past several days – what is my word for the new year? How do I sum up everything that I want to achieve in just one word?

Looking back over the last few years, I’ve come realize that 2010 and 2011 were all about building business relationships and creating a foundation while 2012 was about pushing through and making important decisions about my professional life.

Last year was a difficult time for my family. In terms of my professional life, 2013 was a year of realization, creating opportunity and pushing through my own fears. I have feared failure in the past but I have also feared success… I’ll spend much time and effort developing ideas and nurturing them into reality and then panic when the universe accepts them. I’m willing to put the work in but I’m strangely afraid of doing well. But I’ve faced those fears in 2013 and feel much more confident in my ability to act.

I’ve come to realize through many ‘signs’, trials and error that my focus should be on creating my own success.

2014 will be about creating more opportunities, getting that book published, focusing on my health, taking more time for myself and more travel.

So what is my word for 2014? I have a few that I’m drawn to… Experience. Health. Joy. Thrive. Travel. But the one that encompasses all of these things is

So my word for 2014 is going to be FLOURISH.  In all areas of my life.

This cheesecake is to die for. It combines my favourite candy – chocolate caramel and Skor.

Although I’m now avoiding dairy, I miss this delectable, rich and creamy cheesecake – but you don’t have to!

Here is my recipe for Rolo Skor Cheesecake:

Ingredients:

for the crust

1 cup crushed chocolate cookie wafers (they’ll be close to where you find the graham crackers, or you can use crushed Oreo cookies)

1 tbsp butter

for the filling

4 pkg (8 oz each) cream cheese, softened

1 cup sugar

1 tsp. vanilla

2 tbsp. flour

4 eggs

32 mini Rolos, 1/2 cut in half

1/2 cup Skor bits

Directions:

Preheat oven to 325°F. For the crust, mix the cookie crumbs with butter and press onto bottom of 9-inch springform pan.

In a large bowl, beat cream cheese, sugar and vanilla with mixer until well blended. Add eggs, one at a time, mixing on low speed after each – only until blended.

Fold in Skor pieces and Rolo pieces. Pour over crust.

Bake for about 55 minutes or until center is almost set. Loosen cake from rim of pan using a knife and let sit. Refrigerate overnight (8 hours).

Remove rim from the springform pan and place cheesecake on a large plate/platter.

Top with more Rolo and Skor bits in the center of the cheesecake. Drizzle with chocolate and serve with whipped cream!
