I’ve been grappling with writing something about our family’s devastating loss. My Father-in-law passed away on May 24, 2013.

Dad was a strong, tough man. His motto was, “There’s no room in this world for wimps – you gotta be tough.”

I don’t think I’ve ever seen a man that loved working as much as he did. He lived for his job, construction was his playing field – literally. Operating the excavator, being the “main man” in his line of work gave him so much joy and satisfaction.

He loved his work so much that he looked forward to going to work. On the weekends even when he had family around, he anxiously waited for Monday morning to come.

He was a true family man, spending all his free time at home, sitting on the front porch or watching his favourite animal shows on television, or making homemade Italian fare like soppressata and salami. He could draw and sketch too although it was a talent of which not many were aware.

He adored his kids, his wife and his grandsons – gioia della vita mia. He would so look forward to our visits and wanted to talk to the boys every day on the phone.

When Nonno first became ill over a year ago, the doctors had misdiagnosed him. They said he had congestive heart failure, sleep apnea and a slew of other ailments including cirrhosis of the liver. But it wasn’t until a few more hospital visits that they discovered his liver was so damaged, it was irreparable. He had end stage liver disease. Because he had so many issues due to having Type 1 Diabetes, it would be too dangerous to even do a biopsy of his liver. A liver transplant was not even an option. It was too far gone. It was in October 2012 when we were told he would only have a few months to live.

But he fought. “You gotta be tough,” he would always say and tough he was. He was home for Christmas and New Year’s. In and out of the hospital with maybe a week at a time at home, he spent most of the past year in a hospital room. Watching such a strong man deteriorate before your eyes has to be one of the most difficult things to witness.

Even worse is when you can’t help. The most difficult of all is hearing someone you love beg for your help and being completely and utterly helpless.

Dad fought to live through another birthday, another Easter and another wedding anniversary, his 43rd. We celebrated with cake in his hospital room.

Visiting him at the hospital had become a way of life. My kids now understand what sugar levels are good, what oxygen levels we should have – things that we never thought they would learn so young.

We didn’t hide Nonno’s illness from them; they were aware that he would not have much longer to live and it was important to spend as much time with him as possible. But they had a lot of questions which provided us with a real opportunity to teach them what happens.

We went to visit Dad on Thursday night. We had taken yet another turn for the worse. This was it. How many times did we say this before but he did. But we knew. Even he knew. He wouldn’t come out of it this time. His final words to us – I love you.

Dad was home when he passed on Friday, May 24, his final breath taken in the presence of his wife and his sister. My husband had just stepped out for a few minutes when he died. Although everyone knew we would lose him, you can never be prepared to say goodbye to a loved one.

No more needles. No more IVs and puncture wounds. No more bruises and tubes and tapping. No more pain.

Trying to ease their pain, I explained to my kids that while their grandfather’s body is gone, his spirit lives on forever. I do believe in an afterlife, yes… our spirits do cross over into an everlasting realm and I know that loved ones will be reunited once again. Not only do I believe this because of my faith, but I have also experienced much in the paranormal to know that the body is just a temple and that the spirit/soul lives on after our bodies have perished.

Now that he passed, there is much sadness to go around but there is comfort in knowing that Dad is OK. He has already given us signs from the other side. We will miss him always – we miss him already – but we know he’ll be coming around to visit often.

So we’re not saying goodbye but see you later, Nonno.

Who doesn’t love the smell of a freshly bathed baby? All clean and happy, snuggled and warm. I have yet to meet a person who says that they dislike the smell of a freshly washed baby in a clean sleeper.

As new parents, when we brought our first baby home three years ago we couldn’t get enough of this sweet smell. Then one day we started to smell something not so sweet. We checked his umbilical cord. It didn’t seem to be coming from there. Changed his diaper. Was it the cloth diapers? Nope! New sleeper? Just put one on him.  And while I was using my mom nose I found where it was coming from.

My sweet baby’s underarms. Seriously. As I lifted his arm we discovered that he had started to get yeast. My husband wanted bath time to be daddy and baby time. It was something he could really partake in as I was spending most of the day sitting, breastfeeding and bonding with baby.

We were sponge bathing him while the umbilical cord was still in place and our son would cry during his sponge bath. My husband hated to hear him cry during this time – nobody likes to hear a baby cry, especially a brand new parent. So he would quickly wash him down, especially his diaper area, and would get him dressed again.

He hadn’t been cleaning under his arms fully as he wanted to get baby comfortably dressed again. Needless to say after this discovery we listened lovingly to our sweet baby as he cried and we thoroughly scrubbed him down. As new parents don’t we all learn along the way?

Now as parents of two children, we have come to love various products when it comes to keeping our babies clean. Thankfully baby #2 never developed any underarm gunk.

Below are some of our favourites for keeping baby clean and happy.

1.  Angel Baby Shampoo & Bodywash is a delicate, sweet smelling (but not too strong!) body wash we have used on all of our children and ourselves. It is perfect for a newborn’s skin; not drying at all.

2.  3 Sprouts Towels. Each time our babies grow out of this towel it is one of those things that saddens me to pack away for the next baby. Wrapping them in the 3 Sprouts Towel after their baths, keeping them warm, and then laying them down for a nice massage brings forth so many nice memories of a relaxed and happy baby at the end of a long day.

3.  Huggies Triple Clean Wipes. With babies there are messes. There are diaper changes, which also require full outfit changes (sometimes mom/dad too!).  Projectile milk spit-up can happen too! Always having wipes close by for any mess that may occur is extremely handy. The Huggies Triple Clean Wipes ensure that the mess is cleaned up quick and we can continue with our baby snuggles.

When I was a kid, we used to spend summers at McGregor Park and Outdoor Pool in Scarborough. I have fond memories of lazy hot days by the community pool, playing with friends and having freezies.

It’s been a long time since I’ve been to McGregor. But when I looked it up, I was pleasantly surprised to learn that they’ve revamped the park and pool, adding in a new “Commons” area.

The Commons Lounge at McGregor Park Recreation Centre was jointly funded by the Government of Canada, the Government of Ontario and the City of Toronto through the Recreation Infrastructure Canada (RinC) Program.

The Royal Occasion is the annual signature black tie gala event hosted by the Royal Conservatory of Music to celebrate Canadians who have made a lasting contribution to the Arts. TELUS invited me to be their guest and I graciously accepted.

We enjoyed a lovely dinner at ONE Restaurant by The McEwan Group on Yorkville Avenue in Toronto and then headed over to the amazingly renovated Koerner Hall for the event which was sponsored by TELUS.

This year the RCM honoured rock and roll icon Randy Bachman, internationally acclaimed soprano Adrianne Pieczonka, and legendary music producer Bob Ezrin. The 2Cellos performed as well – did I mention how cute these boys are?! They seriously stole the show, receiving a standing ovation for their moving and powerful performance.

For every table sold at the Royal O, TELUS sent a child to Learning Through the Arts Camp. The Royal Conservatory’s Media Arts Camps gathers talented and media-curious individuals aged 9-14 to explore the process of video and music making.

The ongoing joke throughout the evening was how far you got in the Conservatory – for the record, I finished my Grade 9 piano.

I love that TELUS has a “We Give Where We Live” philosophy and is committed to supporting youth and the Arts in Toronto.

 

This Thai Cashew Chicken recipe is a little time-consuming at first and seems to have a ton of ingredients… but once you’ve made in a few times, it’ll become much easier to make. And it’s so worth it!

I notice that restaurants tend to skimp on the protein in a Thai Cashew Chicken dish – am I right? When you make this Thai Cashew Chicken recipe at home, you can add as much chicken and cashews as you like! As you can guess, I like a lot of chicken chunks with plenty of savour sauce and cashews for that texture and crunch. This recipe takes a bit of prep work but it’s simple enough for any aspiring cook to make at home.

Here’s my recipe for gluten and soy free Thai Cashew Chicken.

Thai Cashew Chicken

Ingredients

  • 4  chicken breasts, cut into bite-size chunks
  • 1 medium red onion, diced into chunks
  • 1 clove garlic
  • 1 1/2 bell pepper, diced into chunks
  • 1 cup mushrooms, diced
  • 2-3 green onions, chopped
  • 1/2 cup cashews, dry roasted, unsalted
  • 4 chicken breasts, cut into bite-size chunks
     

Thai Cashew Chicken Marinade:

Method

1.  Stir together marinade and place in a medium-size bowl. Add chicken pieces and stir well to combine. Set aside.

2.  Combine all Sauce ingredients in a bowl or large cup, stirring well. Set aside.

3.  In a large wok, fry the cashews in oil for a few minutes and then put in a bowl and set aside.

4. In the same pan, sautée the marinated chicken until well-cooked. You may need to cook the chicken in two batches so the chicken is thoroughly cooked. See note below if you have more time**  If the pan becomes dry, add a little of the broth or cooking wine, 1 tbsp at a time as the chicken is cooking.

Note: While you are frying up the chicken, get the rice started in a rice cooker. I make about 3 cups of rice for this dish.

5.  Add the vegetables and cook over medium-high heat until nice and crispy.

6. Add the prepared sauce and the roasted cashews. Stir in cornstarch dissolved in water, stirring until the sauce thickens (1-2 minutes).

7.  Add more salt or sugar or fish sauce to taste

8.  Serve on a bed of Thai jasmine rice.

**NOTE: For super tender chicken, after the chicken has marinated, remove excess liquid. Then, coat chicken breast pieces into arrowroot powder before frying (and I do this in a deep frying pan, not the wok). I’ve tried it this way and the chicken is so tender and once coated with the savoury sauce, is so delicious!

Thai Cashew Chicken

This gluten and soy free Thai Cashew Chicken recipe is worth the time and effort to make at home - savoury sauce with lots of cashews and chunks of chicken.

Prep Time 30 minutes
Cook Time 45 minutes
Total Time 1 hour 15 minutes

Ingredients

  • 4 chicken breasts, cut into bite-size chunks
  • 1 medium red onion, diced into chunks
  • 1 clove garlic
  • 1 1/2 bell pepper, diced into chunks
  • 1 cup mushrooms, diced
  • 3 green onions, chopped
  • 1/2 cup cashews, dry roasted, unsalted
  • 1 tbsp cornstarch powder, dissolved in 3 tbsp water
  • 1-2 tbsp oil for stir-frying
  • Marinade:
  • 2 tsp cornstarch dissolved in 2 tbsp low-sodium soy sauce - or Coconut Secret Organic Raw Coconut Aminos Soy-Free Seasoning Sauce for a soy-free option
  • 3 tbsp cup chicken broth - I use a gluten free Organic Chicken Bouillon Cubes
  • 3 tbsp Fish Sauce (available in tall bottles at Asian grocery stores)
  • Sauce:
  • 1 cup chicken broth
  • 3 tbsp white cooking wine (or red wine vinegar)
  • 2 tbsp soy sauce - again I use the coconut aminos instead
  • 2 tbsp ketchup
  • 1 tbsp rice vinegar
  • 2 tbsp fish sauce
  • 2 heaping tbsp brown sugar (or coconut palm sugar)
  • 1 tbsp Sambal - Sambal Oelek Ground Fresh Chili Paste

Instructions

1.  Stir together marinade and place in a medium-size bowl. Add chicken pieces and stir well to combine. Set aside.

How far can $100 go?

Well for a family of four, $100 is $100 and since we go through a lot of groceries, every bit counts. And now that we’re eating more organic, I’m always scoping stores for their organic products and produce.

I’ve been a parent for almost seven years now, which means I’ve experienced the following wonderful moments:

  1. Had vomit run a chunky river down my cleavage
  2. Wondered whether a brown stain on my jeans was chocolate or poop
  3. Been given the gift of a picked-off scab
  4. Been peed on while wiping the child who says, “I’m do-oooone!”
  5. Been peed on in the middle of the night by the child who says, “I don’t have to go one more time before sleep!”
  6. Seen more pus than one person should ever have to see
  7. Had boogers wiped on my cheeks, hands, shirt
  8. Worn clothes with spit-up all day (and night, who’m I kidding?)
  9. Wiped snotty noses with my bare hands
  10. Picked squiggling lice and sticky nits out of my kids’ hair for four hours
  11. Picked eye boogers out of my kids’ eyes

 

Let’s just face it: kids are gross.

For every aww-moment, there are thirteen disgusting ones waiting around the corner. But for all these gag-worthy things we endure, the one thing that truly turns my stomach is this: The Booger.

I can’t handle this, people. The mucus in a nose shouldn’t be snorted back into your throat for swallowing, expelled onto the street, or picked out, rolled into a ball and flicked or, gah, eaten. There are tissues for good reason, and every parent should own shares.

When recently discussing with my kids why the snot they find so hilarious is so very, very dirty, I discovered some interesting things. Now, I’ve lived almost 40 years believing that the dirt, germs and grime that a nose filters out are fit only for the garbage, and are certainly not something to snack on. (Oh man, the thought alone makes me queasy.) But apparently, I’m wrong.

According to recent studies, eating a booger is snot so bad. A body needs to build immunity to germs, and in order to do so, must be exposed to them. Ergo, if you eat the mucous that contains these germs, you build a tolerance to them and in the end be a healthier person. Following?

I didn’t even know where to go with this information. How do I tell my three-year-old that shoving his finger knuckle-deep into his nasal cavity and tasting his treasures isn’t as bad as I want to believe it is? What will this do to society if this kind of information gets out? Havoc, my friends, havoc.

Maybe this one stays in the vault along with the Tooth Fairy, Santa and the Easter Bunny for now.

On Wednesday, I attended a wonderful TELUS Wellness Learning Centre Session that didn’t fall short of impressing.

We started off the event with a low-impact workout … now when I think low-impact, I think yoga, maybe Tai Chi. Nope!  Lyzabeth Lopez, owner of the Hourglass Workout & Sexy Pilates, led us on a butt-burning session where I got to get up close and personal with @vivimaria, Health & Beauty editor of @urbanebloc. My glutes are still store!
