With its turquoise waters and white sand beaches, Providenciales is a paradise in the Turks and Caicos Islands that has gained popularity in recent years. As you can see from my photos, the island in the northern Caribbean Sea deserves the number one spot.

 When my son and I visited the Turks and Caicos islands on a press trip at Beaches Turks and Caicos Key West Village, we had the pleasure of spending some time on Grace Bay Beach. Grace Bay Beach, has been crowned the reigning champ of beaches worldwide several times.

We went out on a three-hour Island Routes Caribbean Adventures Kitty Katt cruise on a catamaran ride along the coastline. It was beautiful to see the island from this view, and see some of the private villas along the beach. The 65-ft. “Kitty Katt” catamaran cruise takes guests to one of the most stunning coral reefs, where you can snorkel and swim with brilliantly-colored fish and other surprising tropical marine life.  I couldn’t partake as I was with my son, but it’s definitely something kids can do if they’re strong swimmers. Then the “Kitty Katt” sailed off to a pristine deserted cay for a quick swim, before it started to rain. Other than Grace Bay Beach in Providenciales island, there are other gorgeous islands of the Turks and Caicos to explore!

North Caicos and Middle Caicos, connected by a scenic roadway, boast deserted beaches, natural sights, and the Conch Bar Caves. Grand Turk is the charming capital city of Cockburn Town, which once thrived as the vibrant center of the Turks and Caicos. Today, it’s also known for hosting the country’s sole cruise ship port, bringing a splash of excitement to its shores.

Once bustling salt producers, Salt Cay and South Caicos’ tranquil vibes offer a serene escape from the hustle and bustle. With their laid-back atmosphere and authentic charm, they’re perfect for travelers seeking a genuine Caribbean experience, away from the crowds.

Back-to-school time is always an exciting time of the year.  Much like a new calendar year, the start of a new school year brings new goals and plans.

As the kitchen is the hub of the house, I’ve set up a space for my kids to do their homework. This “study corner” was a bit of a disaster, with papers and homework piled up from the last two school years (I know.)

So I finally managed to purge most of the paperwork, and organize the kids’ desk. I have a few things left to do to complete this space, including a dry-erase/cork board and a desk caddy.

We have a new desk chair, courtesy of Staples, that my kids can grow into. What will they do in their chair this year?

Well, both will have EQAO testing and while scores don’t really matter, it will be interesting to see how they do! My son will be in Grade 6 which means he’ll be getting much more homework this year. He’ll need to spend more time reviewing his work – especially math – on a daily basis in order to retain the information.

My third-grader will also start this year playing competitive hockey for the first time, so we’ll have to balance homework with crazy hockey schedules.  Having a dedicated space for him to complete his homework, and have me nearby to ask me any questions while I prepare dinner, will hopefully help him accomplish his daily tasks more effectively.

I may just have to borrow the kids’ desk space with my laptop and enjoy the comfy chair myself, as I continue working on writing my book! More news on that in the near future…

The kids became Athenians for the morning. They learned how the ancient Greeks dressed – and rather than just hear about it, the Insiders showed my boys what Athenians wore. Oh yes, they dressed up with headbands, κεκρύφαλος, and each wore one of the two styles of what men and women wore – the tunic, and the chiton χιτώνας.

They then learned how Athenians would be named and greeted by others; it would be the person’s first name, followed by their father’s name and then the name of their city. So I would be Maria of Grigorios of Agrinio. Then they learned how they greeted others when passing by, and what the family traditions were during those times.

What did the Athenians do for fun? The kids then learned how to play some games that Athenians would play. Frozen Statues, or “Agalmata Akounita”, was a popular game.

Another game was the spinning top, used with an hourglass to see time who could spin it the longest.

After playing some games, we left the base of the Acropolis and headed to Πνύκα, Pnyka or The Pnyx. I had never visited this area before and it was lovely because there were no tourists here! I don’t think regular tour guides take visitors this route – the views are incredible from here.

Beginning as early as 507 BC, the Athenians gathered on the Pnyx to host their popular assemblies, thus making the hill one of the earliest and most important sites in the creation of democracy. The steps pictured below were the podium where the Athenians would voice their opinions about matters concerning Athens.

Each citizen had equal amount of time to share their view without interruption. We also learned how the debates would occur. Alexandra and Natalie acted out a debate, both with equal amount of time to plead their case. We then had an opportunity to vote as Athenians would – by writing on pieces of pottery. The votes would then be counted and the winner would be chosen.

The kids also learned about ancient Greek pottery, how pottery was made, and some of the images used to decorate. They had the chance to try their hand at making their own pottery design.

What a fun way to learn about Athens and a lovely introduction to Greek history for my children. I loved the hands-on experience of learning, and knowledge the Insiders’ offered. Alexandra and Natalie were warm, passionate and knowledgeable. They answered our questions and provided interesting historical and cultural context.

I’m in denial. It’s end of August and I’m still holding onto summer!

As it happens every year, the summer months pass too quickly. How many weekends of summer do we actually get to enjoy? It’s always never enough!

What is your favourite summer fruit? I love fresh peaches, especially the ones from Niagara or if you’re in the south, sweet Georgia peaches. Of course, a yummy way to enjoy peaches is to eat them in a pie.

My recipe for peach pie with gluten free crust is the best gluten free pie recipe you’ll ever need.

Peach Pie with Gluten Free Crust

Ingredients

5 to 6 cups peeled and sliced fresh peaches

1/3 coconut palm sugar or dark brown sugar

1 teaspoon cinnamon

3 tablespoons cornstarch

1 tablespoon butter

1 egg – beaten and used for egg wash

Method

Brush egg wash onto bottom of a gluten free pie crust <– recipe! 

Stir all ingredients together and fill into pie. Dot the top of the peaches with 1 tablespoon of butter.

Roll out second pie crust and cover. Gently pinch edges together to seal the pie crusts together. You may use the back of a fork to create a seal along the edges, or your fingers. Brush egg wash again over the top of the pie crust.

Poke holes on top of crust with a fork. Bake at 350 for 1 hour, and allow to cool before serving. Enjoy!

The one thing I miss about being gluten-free is BREAD. And flaky pie crusts.

Making homemade pie crust is difficult as it is; making a flaky gluten-free pie crust is even tougher! I’ve had many attempts in making the best flaky gluten free pie crust but have failed. 

I’ve experimented with many gluten-free flours to find the right consistency of the best flaky gluten-free pie crust and I think I’ve found the right combination! So I’m pleased to share with you my recipe for the best flaky gluten-free pie crust.

Best Flaky Gluten-Free Pie Crust

Ingredients

3/4 cup unsalted butter

10 tablespoons ice-cold water

1  3/4 cups gluten-free flour blend (I used 3/4 cup rice flour, 1/2 cup tapioca, 1/4 cup almond, 1/4 cup sorghum flour)

a pinch of xanthan gum

1 teaspoon sea salt

2 teaspoons sugar

Method

Cut cold butter into cubes and set aside in the freezer. Add ice cubes to a glass with a few tablespoons of cold water.

Combine the flours, salt, sugar and butter in the bowl of a stand mixer with the dough blender. Mix until the dough resembles coarse meal with pea-sized pieces of butter.

Add 1 tablespoon of ice-cold water at a time, until the mixture starts to clump together. If you’re able to press some dough together and it holds, you’ve added enough water. Don’t over-add water.

Take the dough and divide into two. Place each ball of dough on wax paper, and press down to form two disks. Wrap in remaining wax paper and chill for 1 hour.

On wax paper, and plastic wrap, roll out the dough to pie size with a rolling pin. Carefully remove the top sheet of plastic wrap and transfer into a 9-inch pie plate. Push the dough very gently down so it lines the bottom and sides of the pie plate. If the dough splits or breaks apart just press it back together.

This gluten-free crust comes out so tasty and flaky, you’d never know it’s gluten-free!

The rooms were equally warm and inviting. Our room had a spectacular view of the Acropolis. The beds were comfortable, and the bathroom was spacious. The rooms were very clean – I can’t get over how clean the floors, sheets and towels were. I must mention how the daily housekeeping was impeccable too.

Room amenities include a fridge, which is convenient to store fresh fruit from the market, free WiFi, and TV. The hotel lobby offered a computer with printer in the lobby for guests’ use. The room had good air conditioning, and with 40 degree weather, it was very welcomed after a day spend walking outdoors.

I was very pleased with the level of service from all of the staff. The front desk staff were helpful and warm, offering assistance every time we entered the lobby. The lobby also serves coffee, tea, water and biscuits all day long – a nice touch as you arrive back from sight-seeing and need a quick caffeine fix!

Right outside the hotel entrance is the Agora, a lively marketplace, especially in the mornings. The meat and fish markets are nearby too. We stayed on the 5th floor (of 8 floors) so we didn’t hear any noises from the market. Since we travelled as a family, we weren’t concerned about sleeping in late and having noises from the street.

The roof top offers a breathtaking view of the Acropolis and a 360 view of all of Athens. This added feature was a lovely surprise! During the day, you can sunbathe if you wish on a lounge chair, or visit the open bar at night (starting at 6:30pm) and enjoy a cocktail while soaking in the amazing view.

Breakfast is served 7am to 10am and is an ornate buffet of cold and hot food items, including Greek yogurt, cereals, fresh fruits, breads and croissants, scrambled eggs, bacon and sausages, Greek salad and spanakopita – yes, for breakfast! What a lovely spread to wake up to! My parents and kids filled their plates and tummies before heading out to explore the city.

While it’s considered a three-star hotel, I’d give it a higher rating because of its value price, comfort and excellent location. It offers the charm and comfort you’d desire when travelling with family, but with wonderful affordability.

The Athens Center Square has affiliated hotels in the area as well – the Plaka hotel  and Hermes Hotel. The Athens Center Square is truly a hidden gem in downtown Athens.

Doesn’t Monday feel like New Year’s Day every week? Monday is a fresh start, an opportunity to set a new goal for the week ahead.

What better day of the week to inspire a new project or goal than on a Monday. That’s how Motrin’s #MakeitHappenMonday challenge encouraged me to turn an “I wish” into an “I will.”

My #MakeitHappenMonday challenge was to teach my children the Greek language while on vacation in Greece. My parents and I spoke to them mostly in Greek, and in English to translate.

Young children are natural language learners; they are better at mimicking new sounds and adopting pronunciation. Speaking a language other than your native tongue helps their cognitive development positively.

When I travelled to Greece as a child, I was hesitant to speak the language, especially in front of Greek relatives. I guess I was nervous about my accent, and afraid to make a mistake and say the wrong words. My relatives would call me “ntropali,” which means shy.

My kids, on the other hand, are a different story! They were up for the challenge, and soaked up as much Greek as they possibly could. I’m proud of my kids for not feeling embarrassed to speak the Greek words and phrases they’ve learned so far. In fact, they would speak back with “tharos” – courage.

While my kids are far from being fluent, I’m happy that they’ve made a great start to learning Greek. Although they may speak Grenglish – Greek and English together – it’s fantastic progress! Whenever we make it back to Greece again, my kids will be older and they can hopefully spend even more time fully immersed in the language and culture.

The #MakeitHappenMonday challenge has inspired me to continue teaching my children Greek at home. I feel like I’ve given my children an experience to learn a language first-hand in the country where their grandparents were born and raised – an opportunity of a lifetime.

Q. How can I get my child to eat new foods?

A. This is one of the most common questions I get asked. Parents find it particularly frustrating and feel powerless when it comes to getting their children to try new foods. What typically begins as a parent encouraging her child to at least taste something, or bribing the child with the promise of a favourite dessert can easily become a full out power struggle as the child purses her lips and defiantly refuses to do as requested.

Some of the tips I often provide parents are the following:

Let them serve themselves.

Rather than serving your child from food on the stove or counter, rather place bowls of food on the table and allow each family member to serve him or herself. The younger children may need some assistance but depending on their ages, they may appreciate being given the chance of saying when their plates are full enough. This way, children may be more inclined to try something new, especially when they feel that they are in charge of choice and consumption.

Model what you want to see.

If your children see you eating the foods you’d like them to try, chances are that they will eventually try them too. I’ve known many children who have lived on peanut butter and jam sandwiches or mac and cheese or chicken nuggets and pizza for years and then begin eating broccoli and carrots as they grow older.

How Can I Get my Child to Eat New Foods?

Make food fun.

Janet Nezon, founder of Rainbow Plate finds creative ways to show children (and adults) in centres such as schools and at community events how to appreciate the beauty of food by exposing them to a rainbow of rich colours and textures. Without the pressure to eat them because they are healthy, many children are turned onto trying new food because they are excited to experience them. I had the privilege of interviewing Janet as a guest on one of my podcasts on my site (www.helpmesara.com) about secrets to raising a healthy eater. You may want to check it out.

Bottom line is to try to make food fun. If there’s too much pressure to try new foods, if children feel tricked into eating foods by having them disguised or if they feel forced to eat everything on their plates, then the opposite of your desire to encourage them to try new foods will occur.

On Monday, I set a new challenge, thanks to Motrin Canada’s #MakeItHappenMonday, program will hopefully remind women to turn their own wishes into I will’s. Well, it’s really a new goal for me and my kids – to teach them more Greek while we’re visiting Greece. Read more about my goal here.

Coming to the country where my parents were born and raised until they were in their mid-twenties, I feel a little saddened by the fact that my kids don’t speak much Greek. So, I’ve set a goal to have them learn as much Greek as possible in Greece.

How’s it going so far? Well, it’s been definitely helpful having Greek relatives around to speak to them only in Greek. The more immersed they are in the language, the more they are inclined to understand and respond in Greek… often with a little help. I’m hoping that the words my parents and I are teaching them will stick.

We did face a bit of a challenge while visiting the island of Zakynthos as we didn’t have family around to consistently speak the language. Many at the hotel were tourists, and the kids spent most of the day at the beach or pool. But I managed to mostly respond to them in Greek, as did my parents.

Greek is not an easy language to learn – it has a different alphabet as well, and pronunciation can be difficult. There are moments I feel, “why should I bother?” But it’s a disservice to my kids to not give them at least a chance to learn what they can while we’re here.

Once we arrived back in my parents’ hometown, and surrounded by Greek relatives who hardly speak any English, the kids were picking up new words and phrases. Here is some of what they learned so far.

No matter how daunting or challenging a goal may seem, you can’t just give up. While the goal you set for yourself may seem impossible or difficult, you can and will push through.
