What is your favourite summer fruit? I love fresh peaches, especially the ones from Niagara or if you’re in the south, sweet Georgia peaches. Of course, a yummy way to enjoy peaches is to eat them in a pie.

My recipe for peach pie with gluten free crust is the best gluten free pie recipe you’ll ever need.

Peach Pie with Gluten Free Crust

Ingredients

5 to 6 cups peeled and sliced fresh peaches

1/3 coconut palm sugar or dark brown sugar

1 teaspoon cinnamon

3 tablespoons cornstarch

1 tablespoon butter

1 egg – beaten and used for egg wash

Method

Brush egg wash onto bottom of a gluten free pie crust <– recipe! 

Stir all ingredients together and fill into pie. Dot the top of the peaches with 1 tablespoon of butter.

Roll out second pie crust and cover. Gently pinch edges together to seal the pie crusts together. You may use the back of a fork to create a seal along the edges, or your fingers. Brush egg wash again over the top of the pie crust.

Poke holes on top of crust with a fork. Bake at 350 for 1 hour, and allow to cool before serving. Enjoy!

  9. I just made this pie crust and it is flaky and delicious! It still falls apart like all gluten free pie crusts that I’ve tried, (even bought) but this one you can pinch back together and it stays put!! Winner!! (Personally, I won’t put the butter in the freezer next time as in the instructions. My heavy duty Kitchen Aid mixer had a lot of trouble beating the frozen butter. ‘Refrigerator cold’ is plenty!)
