These energy bars are a cinch to make at home; as long as you keep good stock of the ingredients. They’re quick and easy, gluten-free and packed with protein. It’s more economical to buy ingredients in bulk; I always keep a big container of Medjool dates and huge bag (Costco) almonds in the house as they keep well for several weeks.
These gluten-free energy bars are great for breakfast on-the-go, or for an afternoon pick-me-up with an almond-milk chai latte. I will usually go for two pieces because they are guilt-free!
When I make the next batch, I will experiment with adding some other nuts and seeds, and some dairy-free chocolate chips. I’d imagine you could increase the number of tablespoons of peanut butter and add oats to make a larger batch, but I’m also sensitive to oats, even if they’re made in a gluten-free facility.
Here’s my recipe for quick and easy gluten-free energy bars:
Quick and Easy Gluten Free Energy Bars
Ingredients
2 cups pitted Medjool dates
1 cup almonds
3/4 cup finely shredded unsweetened coconut
2 tablespoons unsweetened cocoa powder
2 tablespoons peanut butter
1/2 tsp almond extract
Instructions
- Place all ingredients in a Vitamix or high speed blender and pulse until the mixture comes together in a clump, about 2 minutes in the Vitamix.
- Spoon our mixture into a parchment-lined 8×8” pan. Place another piece of parchment paper on top and press down with hands.
- Refrigerate for about a half hour to firm up.
- Slice into squares or rectangles. Sprinkle some cocoa powder on top, or drizzle with melted chocolate.
- Store in an airtight container.
