Sunday mornings call for a delicious and nutritious breakfast. When you’re in the mood for something more than a simple eggs and bacon recipe, this Italian Frittata with Sausage recipe is exactly the dish that will fill your morning craving.
Frittatas are great because you can add whatever vegetable you have on hand – asparagus, artichokes, green onion, leeks and spinach all make great additions. If you have extra time to prepare, boiled and chopped potatoes are also lovely to add to this traditional Italian dish.
Italian Frittata
Preparation Time: 20 minutes Cooking Time: 25-30 minutes Serves: 4-6
Ingredients
8 eggs
3/4 cup milk of your choice
2 Italian sausages, boiled and chopped
1/2 red pepper, chopped
1/2 orange pepper, chopped
1/3 cup Parmesan cheese
2 leaves basil, chopped
10 mushrooms, chopped
1/2 large onion, chopped
1 garlic clove, chopped
1 tablespoon extra-virgin olive oil
Pinch of salt and pepper


Method
In a pot, boil the Italian sausage (we buy ours from an Italian butcher for top quality). Once boiled, remove the casing and chop.
In a bowl, whisk together the eggs, milk and Parmesan cheese.
In an oven-safe pan, sauté the onion, garlic, vegetables, and basil in olive oil for a few minutes until soft. Add Italian sausage. Then add the egg mixture, along with salt and pepper.
Once the bottom has cooked for about 5-7 minutes on medium heat, transfer to a 350°C oven for about 20 minutes or until top is golden brown.
