As you know I’m a big fan of soup… this classic French Onion Soup is delicious.

Ingredients:

4 large Vidalia onions, sliced
2 yellow onions, sliced
2 cloves garlic, minced
2 tablespoons butter
2 tablespoons flour
8 cups beef stock
1/2 cup dry white wine
1/2 teaspoon dried thyme
1 bay leaf
Salt and pepper to taste
1 loaf of your favourite Artisan bread or baguette
2 cups grated Gruyere cheese

Directions

Sautee onions and garlic in butter over low heat. Add thyme and cook until onions are tender, about 15 minutes). Sprinkle flour over onions, cook a few minutes more, browning the flour well. Pour in the stock and wine and bring to a boil.

Reduce heat and add bay leaf. Cover, and simmer gently for 20 minutes or so. Add salt and pepper to taste. Remove bay leaf.

Slice bread into 1 inch slices (you may butter both sides if you wish). Toast slices until golden brown. Ladle soup into an ovenproof bowl. Place toasted bread on top of the soup and cover with gruyere cheese. Place bowl into oven and broil top until cheese is bubbly.
