Ingredients

 
1 3/4 cups sifted flour of your choosing (regular unblanched or whole wheat)
2 tsp baking power
1/4 tsp baking soda
1/4 tsp salt
1/3 cup extra-virgin olive oil
2/3 cup coconut palm sugar (or brown sugar if you run out like I did!)
2 large eggs
1 tsp vanilla
3 over-ripe bananas, mashed
1/2 cups walnuts
1/2 cups semi-sweet or dark chocolate chips

Method

  1. In a bowl, sift together flour, baking powder, baking soda and salt.
  2. In separate bowl, beat sugar with olive oil. Add eggs and vanilla.
  3. In 3 parts, add flour mixture alternatively with bananas, beating smooth after each addition.
  4. Stir in walnuts and chocolate chips.
  5. Turn into a parchment-paper-lined loaf pan.
  6. Bake in preheated oven at 350F for about 1 hour.
  7. Allow to cool and then enjoy!
