My father makes the best souvlaki hands down.
Of course I had to learn from the best! And it’s very simple actually. But the secret is in the marinade as well as the grilling.
2 strips pork tenderloin
¼ cup extra virgin olive oil
2 cloves chopped garlic
2 tbsp oregano
1 tsp salt
½ teaspoon black pepper
Chop pork tenderloin into chunks. Add to a large bowl. Pour olive oil, garlic, oregano, salt and pepper and mix. Marinade for several hours.
When ready to grill, skewer meat onto souvlaki sticks. Grill on top rack of barbecue on medium heat.
If you like, squeeze fresh lemon juice over the souvlakia right off the grill and tent (cover with tin foil) for a few minutes before serving. Serve with Tzatziki.
