Nothing beats a simple, chocolate chip cookie. This is a simple chocolate chip cookie recipe that you can easily add to – this time, I added some chopped walnut pieces for some extra crunch and protein!
Ingredients
½ cup unsalted butter, softened
¾ cup light brown sugar, packed
¼ cup granulated sugar
1 large egg
½ teaspoon pure vanilla extract
1 1/4 cups flour
2 teaspoons cornstarch
1 tsp baking soda
½ teaspoon salt
2 cups semi-sweet chocolate chips
1 cup chopped walnut pieces

Directions
Preheat oven to 350 degrees. and line a cookie sheet with parchment paper. Cream butter and sugars in a stand mixer until light and fluffy, about two minutes. Add egg, then vanilla. Add flour, cornstarch, baking soda, salt then chocolate chips and walnuts, mixing until combined.
Roll into balls or scoop dough onto prepared cookie sheet and press dough down to flatten slightly. Bake for 10 minutes (for softer cookies) or 12 minutes for firmer cookies.
I like softer, chewier cookies so 10 minutes is the perfect amount of time for baking. If you’re not a fan of walnuts, leave them out – or add 1 cup of chopped pecans or roasted hazelnuts instead.
