When you’re bored of lettuce and mixed green salads, mix things up with a hearty protein-packed bean and mango salad. This simple bean and mango salad recipe is a crunchy and flavourful vegetarian dish that’s easy to make, and filling too. You can use black beans, or mixed beans if you like, as I did in this recipe!
Bean and Mango Salad Recipe
Ingredients
1 can beans, rinsed
1 mango, chopped
1 small red onion, chopped
1/2 sweet red bell pepper, chopped
1 cup corn kernels
1/2 cup chopped cilantro
Juice of 1 lime
3 tbsp olive oil
1 teaspoon chili powder
salt and pepper
Method
In a small bowl, mix together olive oil, lime juice, chili powder, salt and pepper. Set aside. Chop vegetables into small bite-sized pieces. Transfer to large bowl, and add chopped cilantro. Add dressing to veggies and stir.
