I love this time of year, when all of my favourite vegetables are in season. I especially love flat green beans – Φασολάκια – cooked with romano beans in olive oil and onions/tomatoes, a Greek style dish my mom makes.

Greek Style Green Beans – Fasolakia Φασολάκια


6 cups flat green beans (Green Romano beans) trimmed

1 large onion, chopped

4 cloves garlic

1/3 cup olive oil

4 tomatoes, grated without skin

1-2 cups fresh pole Romano beans

1 cup boiling water

Salt and pepper to taste


Cut ends off the flat beans and rinse. Steam green beans for 10 minutes – remove from heat.

In a pot, sautee onions until soft. Add garlic and sautee for 1-2 minutes. Add grated tomatoes and stir. Add green beans, and romano beans. Add boiling water. Season with salt and pepper.

Cover pot and stir occasionally. Simmer on medium-low heat for about 1.5 hours, or until most water is gone and only oil is left.

    This looks easy, flavorful, and I love that it is also gluten free. My sister in law follows a GF diet and I think she often feels excluded because we all love food so much. I like to find new dishes for her to be excited about too/
