I LOVE apples and cinnamon, any time of the year. This gluten-free apple cinnamon loaf recipe is easy to make and will likely be consumed within the day.

Gluten-Free Apple Cinnamon Loaf

Ingredients

1 1/2 cup gluten-free flour (I use a mix of almond, sorghum, tapioca and brown rice flour) and a pinch of xantham gum
(if not gluten-free, you may substitute for regular flour)

1 teaspoon cinnamon

1/2 teaspoon salt

3/4 teaspoons baking soda

1/4 teaspoon baking powder

2/3 cups grapeseed oil

1 cup coconut palm sugar

1 teaspoons vanilla

2 eggs

1 1/2 cup chopped apples (peeled and cored)

1 cup chopped walnuts

Topping

3 tablespoons coconut palm sugar

1/2 teaspoon cinnamon

Gluten Free Apple Cinnamon Loaf

Method

Preheat oven to 350. In a bowl whisk together flour, cinnamon, salt, baking soda, and baking powder. Set aside.

In a mixing bowl add oil, sugar, vanilla, and eggs and mix well. Slowly add flour mixture and mix until well combined. Stir in apples.

Pour batter into a greased and floured loaf pan (or parchment-lined). In a small bowl stir together brown sugar and cinnamon and sprinkle over batter.

Bake about 50 minutes or until tester inserted into the centre of the loaf comes out clean. Allow to cool 20 minutes in the pan before removing to cool on a wire rack.
