Banana Bread
This is a healthier version using olive oil instead of butter and organic sugar or Splenda instead of white sugar.
1 3/4 cups sifted whole wheat flour
2 tsp baking power
1/4 tsp baking soda
1/4 tsp salt
1/3 cup olive oil
2/3 cup raw organic sugar or Splenda
2 large eggs, well beaten
1 tsp vanilla
3 over-ripe bananas, mashed
1/2 cups walnuts
1/2 cups semi-sweet chocolate chips (optional)
In a bowl, sift together flour, baking powder, baking soda and salt. In separate bowl, beat sugar with olive oil. Add eggs and vanilla.
In 3 parts, add flour mixture alternatively with bananas, beating smooth after each addition. Stir in walnuts and chocolate chips.
Turn into a greased and lightly floured loaf pan. Bake in preheated oven at 350F for about 1 hour.
